You will need -
100g (4oz) softened butter,
100g(4oz) caster sugar,
100g(4oz) self-raising flour,
2 eggs

Pre-heat the oven to 180C/fan 160/gas 4

Place mini cake cases into a 24 hole mini muffin tin

Place the ingredients into a large bowl and beat together until well blended.

Fill each cake case with a heaped teaspoon of the mixture

Bake in the pre-heated oven for around 15minutes until lightly browned on top and the mixture springs back when gently pressed.

Lift out the cakes and cool on a wire rack.

For the buttercream topping - 100g sifted icing sugar, 50g softened butter, 1 teaspoon of vanilla extract, A few drops of food colouring
