Step by Step

Set your oven to gas mark 5 / 190°C.

To make the cupcakes: Place the cupcake ingredients in a bowl and mix until creamy and smooth.

Spoon the mixture between the 12 paper cases.

Place in the centre of the oven and bake for 15-20 minutes, or until the cakes have risen and are firm in the centre. (Use a Retractable Pokey Tool to test the centre.)

Take cupcakes out of the oven and place to cool.

To make the chocolate buttercream: Place egg whites, in a heat proof bowl with the sugar and salt.

Stir over a pan of simmering water until the sugar completely dissolves.

Remove from heat and whisk until it's a thick meringue consistency.

Gradually whisk in the vanilla, butter and melted chocolate.

Whisk at full speed until it combines together into a smooth mix.

Refridgerate until piping consistency.

Pipe a large chocolate swirl onto each cupcake using a star piping nozzle.

Top each cupcake with a small strawberry
